    Prepare the Vegetables

    Cut the zucchini, bell pepper, and red onion into bite-sized pieces. Rinse the corn if using canned.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into cubes.

Grilling

    Grill the Vegetables

    In a large bowl, combine the zucchini, bell pepper, red onion, and corn. Drizzle with olive oil, cumin, chili powder, salt, and black pepper. Toss to coat evenly. Preheat a grill or grill pan on medium-high heat. Grill the vegetable mixture for about 5-7 minutes, or until they are tender and have grill marks, stirring occasionally.

    Assemble the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side until pliable. Place a portion of the grilled vegetables on each tortilla, add a scoop of black beans, and top with avocado cubes. Serve immediately.
