Prepare the Filling

    Cook the Chicken

    In a skillet, heat olive oil over medium heat. Add shredded chicken, salt, cumin, chili powder, and black pepper. Cook for about 5-7 minutes until heated through and well combined.

    Combine the Filling

    In a large bowl, mix the cooked chicken with black beans and corn kernels. Stir until evenly combined.

Assemble the Enchiladas

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Tortillas

    In a separate skillet, lightly warm the corn tortillas for about 1 minute on each side to make them pliable.

    Fill the Tortillas

    Take a warm tortilla, add about 1/4 cup of the chicken mixture, and sprinkle a little cheese on top. Roll the tortilla tightly and place it seam-side down in a greased baking dish.

Bake the Enchiladas
