In a bowl, mix together the salt, black pepper, smoked paprika, garlic powder, and cumin. Rub the spice mixture all over the pork belly, making sure to cover it evenly.

Preheat your oven to 300°F (150°C). Place the seasoned pork belly on a baking sheet lined with foil. Drizzle olive oil over the top and cover tightly with another piece of foil. Roast in the oven for about 3 hours or until tender.
