Pork Belly

Taco Assembly

Method

Prepare the Pork Belly

  1. 1

    Season the Pork Belly

In a bowl, mix together the salt, black pepper, smoked paprika, garlic powder, and cumin. Rub the spice mixture all over the pork belly, making sure to cover it evenly.

  2. 2

    Cook the Pork Belly

Preheat your oven to 300°F (150°C). Place the seasoned pork belly on a baking sheet lined with foil. Drizzle olive oil over the top and cover tightly with another piece of foil. Roast in the oven for about 3 hours or until tender.

  3. 3

    Crisp the Pork Belly

Remove the top foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30-45 minutes, or until the skin is crispy and golden. Let it rest for 10 minutes before slicing.

Assemble the Tacos

  1. 4

    Prepare the Toppings

While the pork belly is resting, finely chop the red onion, cilantro, and radishes. Cut the limes into wedges.

  2. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, until pliable.

  3. 6

    Assemble the Tacos

Slice the pork belly into bite-sized pieces. Place a few pieces on each tortilla, then top with red onion, cilantro, radishes, and a dollop of sour cream. Squeeze lime juice over the top and add hot sauce to taste.
