Prepare the Taco Filling

Heat the Oil
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Cook the Meat
Add the ground beef or chicken to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

Add Seasoning
Stir in the taco seasoning and water. Mix well to combine.

Simmer
Bring the mixture to a simmer and cook for an additional 5-10 minutes, stirring occasionally until the meat is fully cooked and the sauce has thickened.
Prepare Tacos

Warm Taco Shells
If using hard taco shells, preheat your oven to 350°F (175°C) and bake for 5-7 minutes until crisp. For soft taco shells, you can warm them in a microwave for 30 seconds.

Assemble Tacos
Fill each taco shell with a generous amount of the beef or chicken mixture.

Layer on shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream. Add sliced jalapeños and fresh cilantro according to your taste.
