Preparing the Tortilla Chips

    Cutting the Tortillas

    Stack the corn tortillas and cut them into quarters to create triangle-shaped chips.

    Frying the Chips

    In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the tortilla pieces in batches. Fry until golden brown and crispy, about 2-3 minutes per batch.

    Draining and Salting

    Remove the fried tortilla chips with a slotted spoon and place them on paper towels to drain excess oil. While still warm, sprinkle with salt to taste.

Assembling the Nachos

    Layering the Chips

    On a large baking sheet or oven-safe platter, spread a layer of the crispy tortilla chips.

    Adding Cheese and Jalapeños

    Sprinkle half of the cheddar cheese evenly over the chips and then add half of the sliced jalapeños. Repeat the layering with another layer of chips, cheese, and jalapeños.

    Melting the Cheese

    Preheat your oven to 350°F (175°C). Place the baking sheet in the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.

    Serving the Nachos

    Remove from the oven and allow to slightly cool. Serve immediately with sour cream and guacamole on the side.
