Prep the Ice Cream

    Scoop the Ice Cream

    Using an ice cream scoop, scoop out 8 balls of vanilla ice cream and place them on a baking sheet lined with parchment paper.

    Place the baking sheet in the freezer for at least 1 hour, or until the ice cream balls are firm.

Prepare the Coating

    Crush the Cornflakes

    In a zip-top bag, crush the cornflakes until they are fine crumbs. Mix in the coconut flakes and set aside.

    In a bowl, whisk together the flour, sugar, milk, egg, and vanilla extract until smooth.

Coat the Ice Cream

    Take the firm ice cream balls from the freezer and dip each ball into the batter, allowing excess to drip off.
