Method

Chimipoquitos Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well mixed.

  2. 2

    Cream Butter and Sugar

In a separate bowl, cream the softened butter until smooth. Gradually add the dry mixture and mix until combined.

  3. 3

    Add Eggs and Vanilla

Add the eggs and vanilla extract to the butter mixture. Beat until fully incorporated and the dough is smooth.

  4. 4

    Chill the Dough

Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm up.

Filling Preparation

  1. 5

    Prepare Filling

In a medium bowl, beat the softened cream cheese until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.

  2. 6

Fold in Chocolate Chips and Nuts

Fold in the chocolate chips and chopped nuts (if using) until evenly distributed in the cream cheese mixture.

Assembling and Baking

  1. 7

    Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. 8

    Form Chimipoquitos

Take a tablespoon of chilled dough and flatten it in your hand. Place a teaspoon of filling in the center and fold the dough over to seal it, forming a small pocket.

  3. 9

    Arrange on Baking Sheet

Place the filled chimipoquitos on the prepared baking sheet, leaving some space between each.

  4. 10

    Bake

Bake in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and allow to cool slightly.

  5. 11

    Prepare Topping

In a small bowl, mix the powdered sugar and cinnamon together. Sprinkle over the warm chimipoquitos before serving.
