    Soak the Beans

    Rinse the dried black beans under cold water. Place them in a large bowl, cover with water, and let them soak for at least 6 hours or overnight.

    Cook the Beans

    After soaking, drain and rinse the beans. In a large pot, add the soaked beans and 4 cups of fresh water. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 to 1.5 hours until the beans are tender.

    Sauté the Vegetables

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.

    Add Remaining Vegetables

    Add the diced tomato, green bell pepper, and jalapeño to the skillet. Sauté for an additional 5 minutes until the peppers soften.

    Combine with Beans

    Once the beans are cooked, drain them and add them to the skillet with the sautéed vegetables. Stir in the ground cumin, smoked paprika, salt, black pepper, and cayenne pepper.

    Add Liquids

    Pour in the vegetable broth and lime juice. Stir well to combine, and bring to a gentle simmer for about 10 minutes to allow the flavors to meld.

Garnishing

    Remove from heat, and stir in the chopped cilantro. Serve the black charro beans warm, topped with diced avocado.
