    In a large bowl, combine the olive oil, soy sauce, minced garlic, brown sugar, black pepper, salt, red wine vinegar, dried thyme, and dried oregano. Whisk until well combined.

    Marinate the Beef

    Add the beef sirloin tips to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak tips from the marinade and discard the marinade. Cook the beef for about 3-4 minutes on each side, or until desired doneness is achieved.

Cherry Pepper Relish

    Combine Ingredients

    In a medium bowl, mix the chopped cherry peppers, finely chopped red onion, and fresh parsley. Drizzle with olive oil and red wine vinegar, and season with salt to taste.

    Stir all ingredients until well combined. Let the relish sit for at least 15 minutes to allow flavors to meld before serving.

    Preheat the oven to 425°F (220°C). Cut the potatoes into fries and place them in a large bowl.
