Prepare the Chicken

Bread the Chicken
Season the chicken breasts with salt and pepper. Set up a breading station with three bowls: one with flour, one with a beaten egg, and one with panko breadcrumbs.

Coat the Chicken
Dip each chicken breast in flour, shaking off excess. Then dip into the egg, and finally coat with panko breadcrumbs. Ensure an even coating.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and let drain on paper towels.
Cook the Sesame Noodles

Boil the Noodles
Bring a pot of salted water to a boil. Cook the spaghetti or chow mein noodles according to package instructions until al dente. Drain and rinse under cold water.

In a large bowl, mix together sesame oil, soy sauce, rice vinegar, honey, and sesame seeds. Add the cooled noodles and toss until well coated.
Make the Honey-Dijon Dressing

In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, salt, and black pepper until smooth and well combined.
Assemble the Salad

In a large serving bowl, add baby greens, followed by the sesame noodles, halved cherry tomatoes, and crispy wonton strips.

Slice the fried chicken breasts and arrange them on top of the salad.
