Steak Preparation

    Prepare the Steak

    Remove the New York strip steak from the refrigerator and let it come to room temperature (about 30 minutes).

    Crush the Peppercorns

    Using a mortar and pestle or a spice grinder, crush the black peppercorns until they are coarsely ground.

    Season the Steak

    Rub the steak generously with salt and then press the crushed peppercorns into both sides of the steak to create a crust.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Steak

    Place the steak in the hot skillet and sear for about 4-5 minutes on one side. Flip the steak and continue to cook for another 4-5 minutes for medium-rare, or longer if desired.

    Rest the Steak

    Remove the steak from the skillet and let it rest for at least 5 minutes before slicing.

Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about ¼ inch thick) to form fries.

    Rinse and Dry

    Rinse the cut fries under cold water to remove excess starch. Pat them dry with a clean kitchen towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 4-5 minutes until golden brown.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and drain on paper towels. While still hot, sprinkle with salt to taste.
