Method

Cooking the Pasta

    Boil Water

    In a large pot, bring 4-6 quarts of water to a boil. Add salt to the boiling water.

    Cook Linguine

    Add the linguine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the linguine, reserving about 1 cup of the pasta water. Set the linguine aside.

Making the Shrimp Scampi

    Sauté Garlic

    In a large skillet, heat olive oil and butter over medium heat. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant.

    Add White Wine

    Pour in the white wine and let it simmer for about 2-3 minutes to reduce slightly.

    Incorporate Sun-dried Tomatoes

    Stir in the chopped sun-dried tomatoes and cook for another minute.

    Cook Shrimp

    Add the shrimp to the skillet, cooking for about 4-5 minutes until they turn pink and opaque. Season with salt and pepper to taste.

    Finish the Sauce

    Stir in the lemon juice and chopped parsley, mixing well.

    Combine with Linguine

    Add the cooked linguine to the skillet, tossing everything together. If the sauce is too thick, use reserved pasta water to loosen it to your desired consistency.
