Method

Cake Layers

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, combine all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs. Add milk, vegetable oil, and vanilla extract, and mix until well combined.

  4. 4

    Combine and Bake

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until smooth. Pour the batter evenly into prepared pans and bake for 30-35 minutes. Allow to cool.

Whipped Chocolate Frosting

  1. 5

    Prepare the Frosting

In a large mixing bowl, beat the heavy whipping cream until soft peaks form. Gradually add powdered sugar and cocoa powder, continuing to beat until stiff peaks form. Mix in vanilla extract.

Brownie Bites

  1. 6

    Prepare the Brownies

Preheat your oven to 350°F (175°C) and grease a mini muffin tin. In a medium bowl, melt the butter, then stir in cocoa powder and sugar until smooth. Add eggs and vanilla, mixing well. Stir in flour and salt until just combined.

  2. 7

    Bake the Brownies

Spoon the batter into the mini muffin tin, filling each cup about 2/3 full. Bake for 10-12 minutes or until a toothpick comes out clean. Let cool before removing from the tin.

Assemble the Cake

  1. 8

    Layer the Cake

Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of whipped chocolate frosting on top, then add a layer of brownie bites. Top with the second cake layer.

  2. 9

    Frost and Finish

Frost the top and sides of the cake with the remaining whipped chocolate frosting. Garnish with additional brownie bites on top.

Serve

  1. 10

    Plate and Serve

Slice the cake and serve with a scoop of vanilla bean ice cream on the side.
