Prepare the Vanilla Bean
Slice the vanilla bean in half lengthwise and scrape out the seeds using the back of a knife.

Combine Ingredients
In a medium saucepan, combine the heavy cream, milk, sugar, and the scraped vanilla seeds along with the vanilla bean pod. Heat over medium heat until the mixture is hot but not boiling.

Strain the Mixture
Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl to remove the vanilla bean pod and any coagulated bits.

Preheat Oven
Preheat your oven to 325°F (160°C).

Bake
Bake the custards for about 30-35 minutes, or until the edges are set and the center is slightly jiggly.

Cool
Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
When ready to serve, sprinkle a thin layer of granulated sugar over the top of each custard. Using a kitchen torch, carefully caramelize the sugar until it is melted and golden brown.

Let the brûlée sit for a minute to allow the caramelized sugar to harden. Serve with a dollop of whipped cream on the side.
