Caramelized Onion Aioli

Preparing the Caramelized Onion Aioli

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Slice the onion and add it to the skillet. Cook slowly for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

    Make the Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, and the caramelized onions. Mix well. Season with salt and black pepper to taste. Set aside.

Preparing the Mushroom Juicy Lucy

    Prepare the Mushrooms

    Remove the stems from the portabella mushrooms and gently scrape the gills with a spoon. Season both sides with salt and black pepper.

    Stuff the Mushrooms

    Place a generous amount (about 75 grams) of smoked gouda cheese inside each portabella cap. Make sure to cover the cheese with the edges of the mushroom to prevent it from leaking out while cooking.

    Cook the Mushrooms

    Heat a non-stick skillet over medium-high heat. Add the stuffed portabella mushrooms and cook for about 4-5 minutes on each side until the mushrooms are tender and the cheese is melted.

    Assemble the Sandwich

    On the bottom half of each burger bun, layer the slow-roasted tomatoes, arugula, and the cooked portabella mushrooms. Top with the caramelized onion aioli and place the top half of the bun on.
