Prepare the Lobster Mixture
In a medium bowl, combine the chopped cooked lobster meat, lemon juice, chives, mayonnaise, salt, and black pepper. Mix gently until all ingredients are well incorporated. Adjust seasoning to taste.

Preheat your oven to 425°F (220°C). Toss the cut potatoes in a large bowl with olive oil and salt until evenly coated. Spread them in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway, until golden brown and crispy.
