Chili Preparation

    Cook the Beef

    In a large pot or Dutch oven over medium heat, add the olive oil. Once heated, add the ground beef and cook until browned, about 5-7 minutes. Stir occasionally to break up the meat.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are softened, about 3-5 minutes.

    Add the Beans and Tomatoes

    Stir in the canned diced tomatoes with their juice, kidney beans (drained and rinsed), and black beans (drained and rinsed).

    Season the Chili

    Add the chili powder, cumin, salt, and black pepper. Stir well to combine all the ingredients.

    Simmer the Chili

    Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. For best results, simmer for 1 hour to develop deeper flavors.

Serving the Chili

    Ladle the chili into bowls and top each serving with a dollop of sour cream and a generous sprinkle of shredded cheddar cheese.
