Method
Queso Preparation

Melt the Cheeses
In a medium saucepan over medium heat, combine the cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth.

Season
Squeeze the lime juice over the mixture, add salt to taste, and stir until combined. Set aside.
Roasted Jalapeños Preparation

Prepare the Jalapeños
Preheat the oven to 425°F (220°C). Slice the jalapeños in half and remove the seeds if desired.

Roast
Drizzle with olive oil and sprinkle with salt. Place on a baking sheet and roast for 15-20 minutes until charred.
Smashed Avocado Preparation

Season
Add lime juice, salt to taste, and chopped cilantro. Mix until well combined.
Assembly

Layer the Nachos
On a large platter, spread a layer of tortilla chips. Pour the queso over the chips, followed by the pico de gallo, roasted jalapeños, and smashed avocado.
