Corned Beef Hash

    Prepare the Potatoes

    Boil the diced potatoes in salted water for about 10-12 minutes, or until tender. Drain and set aside.

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for 3-4 minutes until softened.

    Combine Ingredients

    Add the cooked potatoes and corned beef to the skillet. Season with salt, black pepper, and paprika. Stir well to combine.

    Fry the Hash

    Spread the mixture evenly in the skillet and let it cook without stirring for about 5 minutes, allowing the bottom to crisp up. Then, stir and cook for another 5 minutes until heated through and crispy.

    Cook the Eggs

    In a separate skillet, melt 2 tablespoons of butter over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook until the whites are set and the yolks are cooked to your preference, about 3-4 minutes for sunny-side up.

    Mix the Sauce

    In a small bowl, combine 1 tablespoon of Dijon mustard, 2 tablespoons of mayonnaise, and 1 teaspoon of lemon juice. Mix well until smooth.

    Toast the marbled rye bread slices until golden brown.

    Serve the corned beef hash topped with fried eggs on the side. Drizzle with the Dijon sauce and serve with toasted marbled rye on the side.
