Peel and thinly slice the yellow onions. Aim for uniform thickness to ensure even cooking.

In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and stir to coat. Sprinkle with salt and sugar.

Cook the onions, stirring occasionally, for about 30-40 minutes until they are deeply caramelized and golden brown. Add fresh thyme and black pepper to taste in the last few minutes of cooking.

Cut the sourdough bread into bite-sized cubes.
