Chili Preparation

    Cook the Ground Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion and minced garlic to the skillet with the cooked beef. Sauté until the onion is translucent, about 3-4 minutes.

    Combine Ingredients

    Stir in the tomato sauce, kidney beans, chili powder, ground cumin, salt, black pepper, and water. Bring to a simmer.

    Simmer the Chili

    Reduce the heat to low and let the chili simmer for 20-25 minutes, stirring occasionally until thickened.

Fries Preparation

    Cook the Fries

    While the chili simmers, prepare the frozen French fries according to package instructions, either by baking or frying until golden and crispy.

Queso Preparation

    Melt the Cheese

    In a medium saucepan over medium-low heat, combine the cubed Velveeta cheese and milk. Stir continuously until the cheese is melted and smooth.

    If desired, stir in the chopped jalapeños for an extra kick.

    Assemble the Dish

    On a serving platter or individual plates, layer the hot fries, followed by a generous amount of chili, then pour the queso over the top. Finish with sliced scallions.
