Fruit Compote

Prepare the Fruit
Wash, peel (if necessary), and chop the mixed seasonal fruits into bite-sized pieces. Place them in a medium saucepan.

Cook the Compote
Add the granulated sugar, lemon juice, and vanilla extract to the saucepan with the fruits. Cook over medium heat for about 10 minutes, stirring occasionally, until the fruits release their juices and the mixture thickens slightly.

Cool the Compote
Remove from heat and let the fruit compote cool to room temperature, then refrigerate until ready to use.
Panna Cotta

Bloom the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes to bloom.

Heat the Cream Mixture
In a saucepan, combine the heavy cream and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is just about to boil. Remove from heat.

Incorporate Gelatin
Add the bloomed gelatin and the vanilla bean (along with the seeds) to the warm cream mixture. Stir until the gelatin is fully dissolved and the mixture is smooth.

Pour the panna cotta mixture into individual serving molds or cups. Allow to cool slightly, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Once the panna cotta is set, gently unmold it onto serving plates. Top with a generous spoonful of the fruit compote.
