Seafood Preparation

    Prepare the Seafood

    Rinse the cod fillets, scallops, shrimp, and calamari under cold water. Pat dry with paper towels.

    Season the Seafood

    Sprinkle the seafood with salt and black pepper. Set aside.

Breading and Frying

    Prepare Breading Station

    In one bowl, place the flour. In another bowl, beat the eggs and mix in the milk. In a third bowl, mix the cornmeal with paprika, salt, and black pepper.

    Bread the Seafood

    Dip each piece of seafood first in flour, then in the egg mixture, and finally coat with cornmeal mixture.

    Fry the Seafood

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the cod, scallops, shrimp, and calamari in batches until golden brown, about 3-4 minutes per batch. Remove and drain on paper towels.

Tartar Sauce Preparation

    Mix Tartar Sauce

    In a bowl, combine mayonnaise, finely chopped pickles, lemon juice, and dill. Stir until well mixed and refrigerate until serving.

Fries Preparation

    Prepare the Fries

    In a separate pot, heat vegetable oil to 350°F (175°C). Fry the cut potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt.

Serving

    Plate the Captain's Platter

    On a large serving platter, arrange the fried seafood and fries. Serve with the tartar sauce on the side for dipping.
