Prepare the Croutons

Make the Focaccia Croutons
Preheat the oven to 375°F (190°C). Cut the focaccia bread into small cubes and place them in a mixing bowl.

Bake the Croutons
Spread the seasoned bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes or until golden brown and crispy, stirring halfway through. Remove from the oven and let cool.
Prepare the Dressing

Combine Dressing Ingredients
In a mixing bowl, whisk together the anchovy paste, Dijon mustard, lemon juice, Worcestershire sauce, and olive oil until well combined.

Season the Dressing
Season the dressing with salt and pepper to taste. Adjust the flavors as needed.
Assemble the Salad

Prepare the Salad Base
Rinse and dry the romaine lettuce, then chop it into bite-sized pieces. Place the lettuce into a large serving bowl.

Add Cheese and Croutons
Top the romaine with shaved parmesan cheese and the prepared focaccia croutons.

Drizzle the prepared dressing over the salad. Toss gently to combine all ingredients.
