Fish Preparation

    Prepare the Cod

    Rinse the Atlantic cod fillets under cold water and pat dry with paper towels. Season both sides of the fillets with salt, black pepper, and blackening seasoning.

    Heat the Grill or Pan

    If grilling, preheat the grill to medium-high heat. If frying, heat olive oil in a skillet over medium heat.

    Cook the Cod

    Place the seasoned cod fillets on the grill or in the skillet. Cook for about 4-5 minutes on each side until the fish is opaque and flakes easily with a fork.

Tartar Sauce Preparation

    Mix the Tartar Sauce

    In a bowl, combine mayonnaise, chopped capers, fresh dill, lemon juice, and garlic powder. Stir until well mixed and set aside.

Assembly

    Prepare the Rolls

    Slice the asiago rolls in half and toast them lightly if desired.

    Assemble the Sandwich

    On the bottom half of each asiago roll, place a lettuce leaf, followed by a grilled cod fillet, slices of tomato, and red onions. Top with a generous spoonful of caper-dill tartar sauce and then cover with the top half of the roll.
