    Prepare the Potatoes

    Peel the potatoes and cut them into thick chips (about 1 inch wide). Rinse them in cold water and pat dry with a kitchen towel.

    Blanch the Chips

    In a large pot, heat vegetable oil to 320°F (160°C). Fry the chips in batches for 4-5 minutes until they are tender but not colored. Remove and drain on paper towels.

    Make the Batter

    In a bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water until the batter is smooth and thick.

    Fry the Fish

    Increase the oil temperature to 350°F (175°C). Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it in the hot oil. Fry for 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Finish the Chips

    After frying all the fish, increase the oil temperature to 375°F (190°C). Fry the pre-cooked chips again for 2-3 minutes until crispy and golden. Drain on paper towels.
