Prepare the Slaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate small bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrot mixture, and toss to combine. Refrigerate until ready to serve.

Prepare the Chips
Peel the potatoes and cut them into thick strips. Rinse the potatoes under cold water to remove excess starch, then pat them dry with a towel. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the potato strips in batches for about 5-7 minutes or until golden and crispy. Remove from oil and drain on paper towels. Season with salt.

Make the Beer Batter
In a mixing bowl, combine flour, baking powder, salt, and black pepper. Gradually whisk in the Old Speckled Hen beer until the batter is smooth and thick.

Fry the Cod
Dip each cod fillet into the beer batter, allowing excess to drip off. Carefully place the battered cod into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove from oil and drain on paper towels.

Serve
Plate the fish and chips together with a generous serving of JK slaw on the side. Enjoy your homemade fish and chips!
