Prepare the Sauce
In a small bowl, combine soy sauce, rice vinegar, sugar, sesame oil, cornstarch, and water. Mix until smooth and set aside.

Prep the Vegetables
Dice the bell pepper and zucchini, slice the green onions, and mince the garlic and ginger. Set aside.
Cooking

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the shrimp and season with salt and black pepper. Stir-fry for 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the garlic, ginger, bell pepper, and zucchini. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Combine Shrimp and Sauce
Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the shrimp and vegetables. Add red pepper flakes and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens.

Add Peanuts
Stir in the roasted peanuts and sliced green onions. Cook for another minute until everything is heated through.
Serving

Serve the Dish
Serve the Kung Pao Shrimp hot, garnished with additional green onions if desired. Enjoy!
