Preparing the Pork Carnitas

Cook the Pork
In a slow cooker, place the pork shoulder, chopped onion, minced garlic, cumin, oregano, salt, black pepper, and water. Cook on low for 6-8 hours until the pork is tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to soak in the juices until ready to assemble the burger.
Making the Coleslaw

Mix the Coleslaw Ingredients
In a large bowl, combine the shredded green cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well combined. Refrigerate for at least 30 minutes before serving.
Preparing the Onion Rings

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the ice cold water until the batter is smooth.

Cooking the Beef Patties

Shape and Cook the Patties
Form the ground beef into 4 equal patties. Season with salt and pepper. Heat a grill or skillet over medium-high heat and cook the patties for about 3-4 minutes on each side, or until they reach your desired doneness. Top each patty with a slice of cheddar cheese during the last minute of cooking to melt.
Assembling the Burger

Build the Southern Stack Burger
To assemble, place the bottom half of the brioche bun on a plate. Layer with a beef patty topped with melted cheddar cheese, a generous scoop of coleslaw, a portion of pork carnitas, a crispy onion ring, and a slice of tomato. Finish with the top half of the brioche bun. Serve with extra BBQ sauce on the side.
