Prepare the Batter
In a large mixing bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, baking powder, salt, and sugar. Mix well to ensure the dry ingredients are evenly distributed.

Add Wet Ingredients
In a separate bowl, whisk together the eggs and milk until combined. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the chopped green onions.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, it's ready.

Fry the Fritters
Using a spoon or a small ice cream scoop, drop tablespoons of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

In a medium mixing bowl, beat the softened unsalted butter with an electric mixer until creamy. Gradually add honey and a pinch of salt, and continue to beat until the mixture is light and fluffy.
