Method

Shrimp Preparation

    Wrap Shrimp

    Wrap each shrimp with a slice of applewood smoked bacon, securing with a toothpick if necessary.

    Cook Shrimp

    In a large skillet, heat olive oil over medium heat. Add the wrapped shrimp and season with salt and black pepper. Cook for about 3-4 minutes on each side until the bacon is crispy and the shrimp are cooked through. Remove from skillet and set aside.

Grits Preparation

    Boil Water

    In a medium saucepan, bring the water to a boil. Add salt.

    Cook Grits

    Slowly whisk in the stone-ground grits, reduce heat to low, and cover. Stir occasionally and cook for about 20-25 minutes until thickened.

    Add Cheese and Butter

    Once the grits are cooked, stir in the smoked cheddar cheese and butter until melted and creamy. Adjust seasoning with salt if necessary.

Andouille Gravy Preparation

    Cook Sausage

    In the same skillet used for the shrimp, add the sliced andouille sausage. Cook over medium heat until browned, about 5 minutes.

    Sauté Onions and Garlic

    Add the chopped onion and minced garlic to the skillet, cooking until onions are translucent, about 3 minutes.

    Sprinkle flour over the sausage mixture and stir to combine. Cook for 1-2 minutes.

    Add Broth and Spices

    Slowly pour in the chicken broth, stirring constantly. Add paprika, cayenne pepper, and season with salt and black pepper to taste. Simmer for about 5-10 minutes until thickened.
