Prepare Vegetables

    Roast the Peppers and Onions

    Preheat the oven to 400°F (200°C). Slice the bell peppers and onion into strips. Spread them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes, or until tender and slightly charred.

Make Pico de Gallo

    Combine Ingredients

    Dice the tomatoes and onion. Finely chop the cilantro. In a bowl, mix the diced tomatoes, onion, and cilantro. Add lime juice and salt to taste. Set aside.

Prepare Guacamole

    Mash Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Stir in lime juice and salt to taste. Set aside.

Assemble Quesadillas

    Layer Ingredients

    Heat a non-stick skillet over medium heat. Place one tortilla in the skillet. Sprinkle half of the shredded cheese over the tortilla, followed by the roasted peppers and onions. Spoon some pico de gallo and guacamole on top, then sprinkle the remaining cheese. Top with the second tortilla.

Cook Quesadillas

    Cook Until Golden

    Cook the quesadilla for 3-4 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes until the second side is golden and the cheese is melted.

Serve

    Slice and Serve

    Remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges and serve with sour cream, additional pico de gallo, and guacamole on the side.
