Pretzel Sticks

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

Make the Dough
In a large mixing bowl, combine flour and salt. Once the yeast is activated, add it along with olive oil to the flour mixture. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Shape the Pretzel Sticks
Preheat your oven to 425°F (220°C). Punch down the risen dough and divide it into 10-12 equal pieces. Roll each piece into long sticks.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel stick into the boiling water for 30 seconds, then remove and place on a baking sheet.

Bake the Pretzel Sticks
Sprinkle coarse sea salt on top of each pretzel stick. Bake in the preheated oven for 12-15 minutes or until golden brown.

Mix the Ingredients
In a bowl, whisk together mayonnaise, Dijon mustard, minced garlic, lemon juice, salt, and pepper until well combined.

Chill
Cover and refrigerate the aioli for at least 30 minutes to allow the flavors to meld.
House Made Queso

Melt the Cheeses
In a saucepan over medium heat, combine the cheddar cheese, Monterey Jack cheese, milk, and cream cheese. Stir continuously until melted and smooth.

Add Tomatoes and Seasoning
Stir in the diced tomatoes with green chilies, cumin, and salt. Cook for an additional 5 minutes, stirring occasionally.

Garnish
If desired, stir in chopped cilantro before serving.
