Method

Steak and Vegetables

  1. 1

    Prepare the Steak

Thinly slice the ribeye steak against the grain into very thin strips. Season with salt and black pepper.

  2. 2

    Sauté the Vegetables

Slice the onion and bell pepper into thin strips. Heat olive oil in a skillet over medium heat. Add onions and peppers, sauté until softened, about 5-7 minutes. Remove from skillet and set aside.

  3. 3

    Cook the Steak

In the same skillet, increase the heat to high. Add the sliced ribeye steak and cook for about 2-3 minutes, until browned and cooked through.

  4. 4

    Combine Ingredients

Add the sautéed onions and peppers back into the skillet with the cooked steak. Stir to combine and heat through for another minute.

Cheese Sauce

  1. 5

    Make the Cheese Sauce

In a saucepan, combine white queso cheese and milk over low heat. Stir until melted and smooth. Mix cornstarch with a small amount of water to create a slurry and add to the cheese mixture. Stir until the sauce thickens, about 3-5 minutes.

  2. 6

    Add Provolone

Remove the saucepan from heat and stir in the provolone cheese until fully melted and incorporated.

House Cut Chips

  1. 7

    Prepare the Potatoes

Wash and scrub the russet potatoes. Cut them into thin strips to resemble chips.

  2. 8

    Fry the Chips

Heat vegetable oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Assembly

  1. 9

    Assemble the Cheesesteak

Place the steak and vegetable mixture in a hoagie roll or on a plate. Drizzle the cheese sauce generously over the top. Serve with house cut chips on the side.
