Philly Cheesesteak Recipe

Prepare the Steak
Thinly slice the ribeye steak against the grain into very thin strips. Season with salt and black pepper.

Make the Cheese Sauce
In a saucepan, combine white queso cheese and milk over low heat. Stir until melted and smooth. Mix cornstarch with a small amount of water to create a slurry and add to the cheese mixture. Stir until the sauce thickens, about 3-5 minutes.

Add Provolone
Remove the saucepan from heat and stir in the provolone cheese until fully melted and incorporated.
House Cut Chips

Prepare the Potatoes
Wash and scrub the russet potatoes. Cut them into thin strips to resemble chips.

Fry the Chips
Heat vegetable oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.
Assembly

Assemble the Cheesesteak
Place the steak and vegetable mixture in a hoagie roll or on a plate. Drizzle the cheese sauce generously over the top. Serve with house cut chips on the side.
