Method
Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the LandShark Lager until you achieve a smooth batter. Let it sit for 15 minutes.

Prepare the Fish
Pat the fish fillets dry with paper towels. Season them lightly with salt and pepper on both sides.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry the Fish
Once the oil is hot, dip each fish fillet into the batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
Making the Jalapeño Tartar Sauce

Combine Ingredients
In a bowl, mix together the mayonnaise, dill pickle relish, chopped jalapeño, lemon juice, salt, and black pepper. Adjust seasoning to taste and refrigerate until serving.
Preparing the French Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into long strips to form fries.

Heat Oil for Frying
In a separate deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches for about 4-6 minutes or until golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.
