Jerk Salmon

White Rice

Sautéed Spinach

Method

Jerk Salmon

  1. 1

    Prepare Marinade

In a bowl, mix the jerk seasoning, olive oil, lime juice, and honey until well combined.

  2. 2

    Marinate Salmon

Brush the salmon fillets generously with the marinade and let sit for at least 30 minutes to absorb the flavors.

  3. 3

    Cook Salmon

Preheat a grill or skillet over medium-high heat. Cook the marinated salmon for about 4-5 minutes on each side, or until it flakes easily with a fork.

White Rice

  1. 4

    Rinse Rice

Rinse the white rice under cold water until the water runs clear to remove excess starch.

  2. 5

    Cook Rice

In a saucepan, bring 2 cups of water and 1 tsp of salt to a boil. Stir in the rinsed rice, cover, and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and water is absorbed.

Sautéed Spinach

  1. 6

    Sauté Garlic

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. 7

    Add Spinach

Add the fresh spinach to the skillet and cook, stirring frequently, for about 3-4 minutes until wilted. Season with salt and black pepper to taste.
