Huli Huli Chicken Preparation

Marinate the Chicken
In a medium bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, grated ginger, minced garlic, and black pepper to create the Huli Huli marinade.

Marinate Chicken
Add chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour or overnight for the best flavor.

Grill Pineapple
During the last few minutes of grilling the chicken, add pineapple slices to the grill and cook for about 2-3 minutes on each side until caramelized.
Yellow Rice Preparation

Cook the Rice
In a medium saucepan, combine long-grain rice, water, turmeric powder, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed.

Make the Yum Yum Sauce
In a small bowl, mix together mayonnaise, ketchup, sriracha sauce, garlic powder, and water until smooth. Adjust seasoning as desired.
Assembly

Serve the Dish
On a serving plate, place a scoop of yellow rice, top with grilled Huli Huli chicken, and add grilled pineapple slices. Drizzle with Yum Yum sauce before serving.
