Method
Marinate Chicken

Prepare Marinade
In a large bowl, combine soy sauce, brown sugar, ketchup, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper. Mix well until the sugar is dissolved.

Marinate Chicken
Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Grill Chicken and Pineapple

Preheat Grill
Preheat your grill to medium-high heat.

Prepare Pineapple
While the chicken is grilling, mix brown sugar and cinnamon in a small bowl. Sprinkle this mixture over the pineapple slices.

Cook Yellow Rice

Prepare Rice
In a saucepan, combine long-grain rice, chicken broth, turmeric, and salt. Bring to a boil.

Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and liquid is absorbed. Fluff with a fork.

Combine Sauce Ingredients
In a bowl, mix together mayonnaise, ketchup, garlic powder, paprika, sugar, and water until smooth.
Serve

Plate the Dish
On a serving plate, place a portion of yellow rice, top with grilled chicken, and serve with grilled pineapple slices. Drizzle with Yum Yum Sauce before serving.
