For the Huli Huli Chicken

Marinate the Chicken
In a bowl, combine soy sauce, brown sugar, pineapple juice, ginger, minced garlic, ketchup, rice vinegar, sesame oil, and black pepper. Mix well until sugar is dissolved. Add chicken thighs and marinate for at least 1 hour, preferably overnight.

Grill the Chicken
Preheat the grill to medium-high heat. Remove chicken from marinade, reserving the marinade. Grill chicken thighs for about 6-8 minutes per side, basting with the reserved marinade during the last few minutes of cooking until fully cooked and internal temperature reaches 165°F (75°C).

Combine Ingredients
In a bowl, mix together mayonnaise, sriracha, rice vinegar, honey, and garlic powder until smooth. Adjust seasoning to taste.
