Guacamole Preparation

Prepare the Avocados
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Mash the Avocados
Using a fork or potato masher, mash the avocados until they reach your desired consistency (chunky or smooth).

Add Lime Juice
Pour in the lime juice and mix well to prevent browning.

Mix in Vegetables and Seasonings
Add the chopped red onion, diced tomato, chopped cilantro, finely chopped jalapeño, salt, and black pepper to the bowl. Stir gently to combine.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Cut the Tortillas
While the oil is heating, cut each corn tortilla into six triangles.

Fry the Tortilla Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry them until they are golden brown and crispy, about 2-3 minutes. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Season the Chips
While the chips are still warm, sprinkle them with salt to taste.

Continue frying the remaining tortilla triangles in batches until all are cooked.
