Marinate the Chicken
In a bowl, combine the chicken breasts and buttermilk. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, salt, and black pepper.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry the Chicken
Remove the chicken from the buttermilk, letting excess drip off. Dredge each piece in the flour mixture, ensuring it is fully coated. Carefully place the coated chicken in the hot oil and fry for 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each toasted bun, spread 1 tablespoon of mayonnaise. Place a piece of fried chicken on top, followed by a slice of Monterey Jack cheese and 2 slices of dill pickles.

Add Hot Honey
Drizzle 1 tablespoon of hot honey over the cheese and pickles.

Finish the Sandwich
Top the sandwich with the other half of the brioche bun. Serve immediately and enjoy!
