Prepare the Vanilla Custard

Mix Dry Ingredients
In a separate bowl, whisk together the granulated sugar, cornstarch, and a pinch of salt until combined.

Combine All Ingredients
Gradually add the sugar and cornstarch mixture to the tempered egg yolks, then pour the mixture back into the saucepan with the remaining milk.

Cook the Custard
Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

Add Vanilla
Remove the saucepan from the heat and stir in the vanilla extract. Allow to cool slightly.
Assemble the Banana Pudding

Prepare the Bananas
Slice the ripe bananas into thin rounds, setting aside some slices for garnishing.

Layer the Ingredients
In a large serving dish, start with a layer of vanilla wafers, then add a layer of sliced bananas, followed by a layer of the vanilla custard. Repeat the layers until all ingredients are used, finishing with custard on top.

Prepare Graham Cracker Topping
Crush the graham crackers into small pieces and sprinkle them over the top layer of custard.

Make Whipped Cream
In a mixing bowl, beat the heavy cream and powdered sugar together until soft peaks form.

Top with Whipped Cream
Spread the whipped cream over the top of the pudding, and garnish with additional banana slices.

Chill
Refrigerate the assembled banana pudding for at least 2 hours before serving to allow the flavors to meld.
