Marinating the Chicken

Prepare the Marinade
In a large bowl, combine olive oil, lime juice, minced garlic, cumin, salt, and black pepper. Whisk until well blended.

Marinate the Chicken
Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
Grilling the Chicken

Preheat the Grill
Preheat your grill to medium-high heat.

Cook the Bacon
While the chicken is grilling, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.

Add Cheese and Bacon
Once the chicken is done grilling, top each breast with a generous portion of shredded Monterey Jack cheese and a couple of slices of crispy bacon. Close the grill lid for about 2 minutes to melt the cheese.
Serving

Prepare the Plate
Remove the chicken from the grill and drizzle with Caribbean mayonnaise. Serve immediately.
