Method

Fish Tacos

  1. 1

  2. 2

    Grill the Fish

Preheat the grill to medium-high heat. Grill the marinated Mahi Mahi fillets for about 5-6 minutes on each side or until cooked through and flaky.

  3. 3

    Warm the Tortillas

While the fish is grilling, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side.

Habanero Cream Sauce

    Mix the Sauce

In a bowl, combine sour cream, minced habanero pepper, lime juice, garlic powder, and salt. Mix well until smooth. Adjust the salt to taste.

Guacamole

    Prepare the Guacamole

In a bowl, mash the ripe avocados. Add lime juice, salt, diced tomato, chopped cilantro, and diced red onion. Mix until well combined and creamy.

Mango Pico de Gallo

  1. 6

    Make the Pico de Gallo

In a bowl, combine diced mango, diced tomato, chopped red onion, chopped cilantro, and lime juice. Toss gently to mix.

Black Beans and Rice

    Heat the Beans and Rice

In a saucepan, combine cooked black beans, cooked white rice, cumin, and salt. Heat over medium heat until warmed through.
