Dijon Aioli Preparation

Make the Aioli
In a small bowl, combine the mayonnaise, Dijon mustard, minced garlic, lemon juice, salt, and pepper. Mix well until all ingredients are thoroughly combined. Set aside.

Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper on both sides. Let them sit for about 10 minutes to absorb the flavors.

Grill the Chicken
Place the chicken breasts on the preheated grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). During the last minute of grilling, place a slice of Monterey Jack cheese on each chicken breast to melt.

Assemble the Sandwich
Cut the sandwich rolls in half. Spread a generous amount of the Dijon aioli on both halves of the rolls. On the bottom half, layer the grilled chicken with melted cheese, crispy bacon, lettuce, and sliced tomato. Top with the other half of the roll.
