Burger Preparation

Cook the Bacon
In a skillet over medium heat, cook the applewood-smoked bacon until crispy, about 8-10 minutes. Drain on paper towels and set aside.

Prepare the Beef Patties
While the bacon is cooking, form the ground beef into 4 equal patties. Season each side with salt and black pepper.

Cook the Patties
In the same skillet used for the bacon, cook the beef patties over medium-high heat for 4-5 minutes on each side, or until they reach your desired doneness. Top each patty with a slice of Swiss cheese during the last minute of cooking to melt.

Toast the Buns
Split the burger buns and toast them in the skillet for 1-2 minutes until golden brown.

Assemble the Burgers
On each toasted bun, layer the cooked beef patty with melted Swiss cheese, 2 slices of crispy bacon, a leaf of lettuce, and 2 onion rings. Spread the roasted garlic aioli on the top bun before closing the burger.

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast in the oven for 30-35 minutes until soft and caramelized.

Make the Aioli
Once the garlic is cool enough to handle, squeeze the roasted garlic cloves into a bowl. Add the mayonnaise, lemon juice, remaining olive oil, salt, and black pepper. Mix until well combined and creamy.
