Method
Preparing the Tartar Sauce

Make the Tartar Sauce
In a medium bowl, combine the mayonnaise, diced jalapeños, lemon juice, and diced dill pickles. Mix well until all ingredients are thoroughly combined. Set aside in the refrigerator to chill while you prepare the fish.

Prepare the Cod Fillets
Pat the cod fillets dry with paper towels to remove excess moisture. This will help the batter adhere better.

Make the Batter
In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually pour in the beer while whisking until the batter is smooth and has no lumps.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Fry the Cod
Dip each cod fillet into the batter, allowing any excess to drip off, then carefully place it into the hot oil. Fry for 4-5 minutes per side, or until golden brown and cooked through. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
Assembling the Sandwich

Assemble the Sandwich
Toast the burger buns lightly, if desired. Spread a generous amount of the jalapeño tartar sauce on the bottom half of each bun. Place a fried cod fillet on top, followed by a handful of shredded lettuce and a spoonful of diced tomatoes. Top with the other half of the bun.

Serve the fried cod sandwiches immediately, with extra tartar sauce on the side if desired.
