Method

Preparation of Calamari

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the head and innards if not already done. Cut the calamari into rings about 1/2 inch thick.

    Prepare the Breading Station

    In one bowl, combine flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the eggs. In a third bowl, place the bread crumbs.

Frying the Calamari

    Heat the Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Take a handful of calamari rings, dredge them in the flour mixture, dip them in the beaten eggs, and finally coat them with bread crumbs.

    Fry the Calamari

    Carefully place the breaded calamari in the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Avoid overcrowding the pan.

    Drain and Keep Warm

    Remove the fried calamari with a slotted spoon and place them on paper towels to drain excess oil. Keep warm in a preheated oven.

Making the Sauces

    Prepare Cocktail Sauce

    In a small bowl, combine ketchup, horseradish, lemon juice, and Worcestershire sauce. Mix well and set aside.

    Prepare Cajun Remoulade

    In another bowl, mix mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, minced garlic, and hot sauce until smooth.

Serving

    Plate the Calamari

    Serve the fried calamari hot with a side of cocktail sauce and cajun remoulade for dipping.
