Preparing the Fish

Make the Batter
In a bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water while whisking until the batter is smooth.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there’s enough oil to deep-fry the fish without overcrowding.

Batter the Fish
Dip each cod fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Preparing the Fries

Cut the Potatoes
Peel and cut the russet potatoes into thick fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a towel.

Fry the Fries
In the same oil used for the fish, fry the potatoes in batches for about 4-5 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

In a bowl, mix together the mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill until well combined.
