Fish Preparation

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let it rest for about 15 minutes.

    Cut the fish fillets into bite-sized pieces. Pat them dry with a paper towel to remove excess moisture, which will help the batter stick better.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches approximately 350°F (175°C).

    Dredge the fish pieces in the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Cook for about 3-4 minutes or until golden brown and crispy. Remove the fish with a slotted spoon and drain on paper towels.
